Let's face it, no one is in the mood for stew at the moment as the sun beats down in Waterford, a rarity for an Irish summer. So on The Big Breakfast Blaa, Ollie and I got talking about a the joy of a simple salad. With that in mind, we decided to task our culinary genius Sinead Cunningham with the job of relaying some easy recipes.
Potato and bacon salad
It's hard to find an Irish person who doesn't love spuds, and they really come into their own in the summer.
This involves only five basic ingredients, and you can add measurements in accordance with your own taste, Sinéad tells us. All you need are baby potatoes, smoked rashers, a scallion, mayonnaise and wholegrain mustard. You'll hear more in the interview below about how we got on tasting it.
Salad to accompany barbecued chicken
Sinéad adds this salad to a chicken fillet that she cooks on the barbie (the meat is marinaded in cajun spices, the juice of an orange and olive oil). The salad entails cucumber, red onion, sweet corn, coriander, lime juice and olive oil. As she told us this morning, if you're firmly in the anti-coriander camp, you can always just leave it out.
Apple and celery - a match made in heaven
Last but certainly not least, Sinéad extoled the joy of putting apple and celery together in a salad, with the addition of mayonnaise, creme fraiche, and the option of chipotle flakes and lime juice.
