Ian Doyle of The Cliff House Hotel Ardmore, County Waterford is first up in the latest series of Beyond the Menu.
Season 3 of the show returns to RTE 1 at 8.30pm tonight (Wednesday October 27th.)
The six part documentary series profiles Ireland's best chefs and is made by production company Appetite Media.
The show's presenter Mark Moriarty told Damien that first and foremost it's a series about people,
You'll see the food speaks for itself but it's more about why people like Ian get up at six in the morning and work til one o'clock the next morning, and what drives them, and the mindset of what goes into being the best.
Mark also discussed travelling to Waterford to meet Ian Doyle and how great it was to get stunning images of the Cliff House in Ardmore.
