Top tips for a great curry :

  • Start with the aromatics  - onion, garlic, ginger
  • Curry powder v garam masala
  • Curry powder v curry paste c curry sauce
  • Must cook out the spices
  • Ensure spices are in date
  • A sprinkle of spice bag mix of Chinese 5 spice
  • Tomato
  • Stock
  • Ground almonds
  • Creamy  -  cream, yogurt, coconut milk
  • Not all the vegetables -  a curated selection
  • Reduce the sauce by half for great consistency
