A temporary closure order was issued for a Waterford business last month, due to evidence of a rat infestation.
A dead rodent was found in a box of crisps on the shop floor of Asian Food Babak.
The premises in the Park Road Business Park was served with the closure order by the HSE and Food Safety Authority of Ireland on the 3rd of March.
An inspection had found that there was inadequate pest control measures there.
The dead rodent was found caught in a glue trap inside a box of crisps.
Rodent droppings were also found in various areas throughout the shop including under packets of noodles on shop shelving and in the presses in the staff canteen.
The HSE said this posed a grave and immediate danger to public health because of the harmful pathogens rodents can transmit.
However, measures were taken by the owners of the company to address the issues and the closure order was lifted just over a week later, on the 11th of March.
It was one of seven food businesses which were shut down for breaches of food safety legislation during March.
The other business were in Dublin, Limerick, and Cork.
The FSAI says it's simply not good enough that there continues to be such grave and serious disregard of basic food safety procedures.
This follows another closure order which was served upon a separate Waterford food business in February.
