Delicious Christmas Leftover Recipes
Christmas Dinner is the gift that keeps on giving! Everyone loves Christmas dinner, but let’s be honest about it, the best part about Christmas dinner is the leftovers. Sinead in our office has put together some Delicious Christmas Leftover Recipes just for you.
Here are a few ideas of what you can do with yours!
Christmas Veg Frittata
Ingredients:
Carrots
Parsnips
Brussels sprouts
1 red onion (cut into 8)
6 eggs
1/3 Cup of milk
1 Cup grated cheese.
Salt & Pepper
Method:
Preheat your oven to 200 degrees, grease a 20cm quiche tin. Whisk eggs, milk, cheese, salt & pepper together. Add veg to the dish, pour egg mixture over. Give the dish a little shake to make sure the egg mixture spreads to the base. Bake for about 25 minutes or until it’s golden on top and the centre is set. This one is a winner, it’s protein-packed and will keep you full for hours (might help with staying away from the selection boxes)
Christmas Dinner Hash
This is a great way to use up EVERYTHING that’s left over from dinner.
Ingredients:
Turkey & ham (use as much as you like, no measurements needed for this)
1 or 2 *Roast Potatoes
Carrots/parsnips / brussels sprouts
Stuffing
Gravy
Method:
Grab a thick-based frying pan and add some oil & butter and put on medium heat.
Cut your turkey & ham into little bite-size cubes, and keep your veg and spuds in around the same size also. Add these all to the pan together and sauté till cooked through and crispy. Add some stuffing and mix in.
Pour over some heated gravy and enjoy.
**Roast potatoes are best for this as they keep shape better than mash 😊
Turkey Fricassee
Ingredients:
1 x clove garlic
100g mushroom (quartered)
1 tbsp plain white flour
White wine for the dinner, roughly 150ml (and another for yourself)
150ml of chicken stock (or turkey stock if you’ve got some leftover)
150ml of double cream or crème fraiche
800g of leftover boneless cooked turkey
1 tbsp of finely chopped fresh tarragon
(keep a few sprigs of tarragon for garnish)
Salt & Pepper
Method:
Heat butter in pan then add the mushrooms and garlic and sauté till softened. On a medium heat, sprinkle
Over the flour and stir till a paste forms (roux). Cook the flour out (maybe two mins)
Pour over the wine and stir (let it simmer for a minute – this will cook the wine out)
Then add in the stock, turn the heat up and bring to a boil. Reduce the heat again to a simmer.
Stir in the cream / crème fraiche.
Add your turkey, salt & pepper, and tarragon.
Simmer until the turkey is heated through.
Serve with steamed baby potatoes / baked potatoes or rice.
Add fresh tarragon garnish.
Ham & Cheese Mashed Potato Croquettes
Ingredients:
Mashed Potato
Grated Cheese
Chopped Ham
Cup of milk
1 egg
Breadcrumbs
Method:
Add mash, grated cheese, ham, salt and pepper to a bowl and mix. Shape into small balls. Whisk egg & milk in a separate bowl. Dip the mashed potato balls into the egg & milk mixture then coat them in breadcrumbs. Fry in a little oil & butter. These are great as an appetizer or as a side dish.
And last, but by no means least…. Christmas dinner sandwich!
I know, yeah… maybe you think this is lazy BUT, the Christmas Sandwich IS THE ULTIMATE Christmas dinner leftover food – and that’s not up for discussion!

Nothing, and I mean NOTHING beats this sandwich at 10 pm on Christmas night,
The only issue I have is deciding which to use, brown sauce or mayonnaise! 😊
